A great vegetable recipe to accompany any meal is lemon grilled asparagus. Especially at the peak of the season, lemon grilled asparagus is tasty and perfect as a side.

Transcript:How to Make Lemon Grilled Asparagus

Hi, I'm Roblé for About.com. Today I'm going to show you how to make lemon scented grilled asparagus. I know that's a mouthful but it's pretty simple. Here we go.

Ingredients for Lemon Grilled Asparagus

Here are our ingredients.
  • 1 bunch of asparagus
  • juice of one lemon
  • zest of 1/2 of a lemon
  • blended olive oil
  • kosher salt
  • black pepper

Recipe for Lemon Grilled Asparagus

The first thing you want to do is to trim the bottom of your asparagus. Trim it right at the point where the white bottom meets the green stem. Cut it at an angle.

So here we have our asparagus right on a cookie sheet or 1/2 sheet tray. I'm going to drizzle over some olive oil. About 2 tablespoons or so. Next I'm going to season with kosher salt and fresh cracked black pepper. Now you want to just mix it together with your hands.

Now we have some beautifully seasoned asparagus. It is ready to hit the grill.

Suggestions for Cooking Asparagus

So here we have a screaming hot grill pan over high heat. I'm going to take it about 1/4 of the asparagus and place it right on the grill. You want to cook it in small batches so you don't overcrowd the pan. You want to let them get a good grill marks on one side and then we will roll them over. One good thing to do is press them down with a spatula to make sure that they are getting direct contact with the surface. It should take about 1 1/2 minutes on each side. The best way to flip the is not to flip these. What you want to do is take a spatula pressing down on the asparagus and just roll back. So we will give them another 1 1/2 minutes on their side and they will be done. Keep repeating this process until you have grilled all of your asparagus. Once all of your spirit is is grilled you want to take your lemon zest and put into your lemon juice. Mix it together with a fork. Next you want to take your lemon zest and juice mixture and pour it over the top of the asparagus. Next mix it around to make sure everything is fully and evenly incorporated.

So here is your lemon scented grilled asparagus. You can pair this up with just about anything. Chicken, pork, veal, shrimp, beef.... it works with everything.
