Low Calorie Chicken Caesar Spring Roll Ingredients
Today I'm going to show you how to make a Chicken Caesar Spring Roll. To make spring rolls you need spring roll wrappers, or "skins" as they are called. They are basically made out of rice flour and water. I have some baby romaine, some strips of chicken meat, and some red bell pepper. By the way you can use regular romaine, but I like the baby romaine better, which is easier to use and easy to find.Now, as far as a work surface, I like these silicon baking mats. I think they are the best surface, some people like cutting boards, but I find these work much better.
Soak the Low Carb Rice Spring Roll Wrappers
Step 1, you must soak this. I use cold water. I don't want this to hydrate to quickly. Some people use warm water. Stage one is what I call the "plastic-y" stage, where it's too firm to work with, it's kind of crinkly. Stage two is the "leathery" stage which what we are looking for. It's bendable, it's easy to work with, but it's not too soft. Let me show you what too soft is - see that, it's kind of like a rubber balloon, easy to tear.So we're going to dip it in cold water until we get to the leathery stage. I'm going to put it down on the silicon baking mat and it totally disappears. Now, anything you put this on its going to disappear, this is one of the problems with a spring roll demo, but you'll see when I roll it up where it is.
Assemble the Chicken Caesar Spring Rolls
On the bottom third, because we want room to roll, so on the bottom 3rd we're going to put down some lettuce, a few strips of chicken, a few strips of bell pepper. I'm going to top it with a few leaves of the romaine because I want it covered in green, I think it looks nice when we cut it. Now I'm going to go slow motion. Fold in the sides; I left about an inch and a half on either side. Again, you're working on the bottom third of the round. I'm going to pull it up and stretch it over. As soon as the spring roll wrapper hits the bottom of the other side it sticks like glue. Then you can firmly roll it and wrap it and when you get towards the end you can really push down firm and it will all come together and like I said, it sticks like glue upon itself, it's like plastic wrap. If you need to store these, some damp paper towels will work. You can keep them for about 8 hours - I've even done them overnight. When you are ready to serve, unwrap them and take a very sharp knife and I like to cut them on the bias, which just means on an angle. And look how beautiful these are. They make such a great lunch item, cut in half like that with a little Caesar dressing dipping sauce. If you are having a cocktail party these are great finger food.Anyway, that's how I roll, and now you can roll the same way. Give those a try- really fun! Enjoy.
