Transcript:Heirloom Tomato Panzanella Salad

Hi. I'm Chef Roblé for About.com. Today we'll be working with heirloom tomatoes to make a salad called a panzanella. Here we go.

Heirloom Tomato Panzanella Ingredients

Here are our ingredients:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 3 leaves of basil
  • 1/4 cup ricotta salata
  • 1/2 pound heirloom tomatoes
  • 1/2 cup salad croutons
  • kosher salt
  • black pepper

Prep the Heirloom Tomatoes

First were going to cut the tomatoes into bite-size pieces. We are going to begin by removing this little piece right here. Just cut that right out. Cut it across and across again. Cut it across and across again. We're going to place the tomatoes right into a bowl.

Mix the Panzanella Salad

We're going to take the basil leaves, turn them into small pieces. Right into the bowl. Add the cheese right into the bowl. Add croutons right into the bowl. Four turns from the peppermill, right into the bowl. Add a pinch of salt right into the bowl. Add the oil and the vinegar right into the bowl. Now we're going to mix it around. Just toss it around. And here you have your panzanella salad with heirloom tomatoes.
