Transcript:How to Make Sofrito

Hi, I'm James, for About.com. I'm going to share an easy sofrito recipe that will add a punch of flavors to your cooking.

Sofrito is a blend of aromatic herbs and vegetables that can be added as a base to beans, soups, stews, rice, and meats.

Sofrito Ingredients

To make sofrito, you will need:

  • 3 large green bell peppers, seeded and chopped
  • 1 large red bell pepper, seeded and chopped
  • 10 Aji Dulce peppers (if available)
  • 4 onions, cut
  • 3 heads of garlic, peeled (30-35 cloves)
  • 1 bunch of cilantro
  • 1 bunch of culantro
  • 2-3 tbsp. of olive oil

If you are lucky to have Aji Dulce peppers available in your area, you may add in ten to your mix.

One bunch of culantro: They can be found in Latin and Asian food markets. If you cannot find, use extra cilantro.

Blending Sofrito Ingredients

You will need a food processor or a blender.

First add the olive oil. You don't need too much. This will get the blend going. Add in all your ingredients starting with the onions, garlic, peppers, cilantro and culantro. If you notice that it is sticking, add a little more olive oil.

Sofrito smells and looks amazing! Once you combine all your ingredients, you will have a semi-thick puree.

Storing Your Sofrito

This recipe makes five cups.

You can store sofrito in a glass jar in the refrigerator for immediate use or freeze sofrito in ice cube trays. Place frozen cubes in a zip lock bag and store in freezer. Anytime you want to add a burst of flavor in your cooking, add in a couple of cubes to your dish.

There are many variations of sofrito. Some other ingredients or spices you can add are: tomatoes, oregano, paprika, or annatto oil. Experiment and combine flavors to make your special unique sofrito.
