This is Jason Smiles and you're watching About.com. Today, I'm going to show you how to make pomegranate apple salad. This salad feeds four to five people.
Pomegranate Apple Salad Ingredients
For the dressing, we're going to need:
- 6 tablespoons of olive oil
- 1 tablespoon of honey
- 2 tablespoons of apple cider vinegar
For the salad, you'll need:
- Approximately 1/2 head of lettuce
- 2 pomegranates' worth of seeds
- 2 apples
- 1/4 onion
- It's optional but you can garnish it with any cheese you like
Prepare Lettuce and Pomegranates for Salad
We're going to start by chopping up our lettuce. We're going to cut it, starting at the base. Disregard the stump and work our way up to the greener stumps at the end. You want to cut it in nice strips and set them aside. We're going to cut these pomegranates up. We're going to start by slicing it right down the middle. Watch out--this can get a bit messy. Once you split it down the middle, you're going to want to remove all the seeds. Try not to stain your clothing while pulling these seeds out. We're going to put these seeds to the side in a bowl. We're going to mix those in with the salad later on.
Slice Apples for Salad
We're going to move on to thinly slicing this onion. We're going to use it as a garnish along with some apple slices. Once sliced, take your onions and set them aside. Now the apples. We're going to slice one. We're going to slice it in to thin slices to garnish on top. After you're done slicing, you're going to take your apples and set them aside. The other apple, we're going to be chopping into cubes and tossing it into the lettuce. Slicing one and cubing one adds texture to the salad.
Make Dressing for Pomegranate Apple Salad
Now we're going to start with the dressing. I like to put everything into one measuring cup. We're going to put in six tablespoons of this olive oil, and two tablespoons of apple cider vinegar and one tablespoon of honey. Give it a nice mix up with a fork. Now it's time to mix it all together and serve. We're going to add all these pomegranates into the chopped apples and the lettuce. Make sure you get all that nice juice there that settled to the bottom of the bowl. We're going to add our dressing. One last mix to make sure everything is combined and then we add it to the salad. Get a nice even coat over and mix it all up. Take a nice scoop of salad here and break a little bit of cheese right on top of this salad. We're going to add some of these thinly sliced onions and a couple sliced apples. Voila! You're ready to eat.
