Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make kosher potato kugel.Kosher Potato Kugel Ingredients
For this recipe you will need:- 8 medium potatoes
- 2 onions
- 1/2 cup carrots
- 6 eggs or 1 1/2 cups egg substitute
- 1/2 cup oil
- 4 tablespoons all-purpose flour, or for Passover, 6 tablespoons matzo meal and 1 tablespoon potato starch
- 1 tablespoon salt
- 1 teaspoon pepper
Combine the Ingredients
In a large bowl, mix the eggs, oil, flour--or in this kosher for Passover example, the matzo meal and potato starch--and the salt and pepper.Set the bowl aside while you work on the vegetables.
Peel and Grate the Potatoes
Peel all of the potatoes. Rinse them under running water, and then put them into a food processor with a grater attachment.You may need to cut them to fit in the mouth of the machine. Coarsely grate all of the potatoes.
Pour them into a colander, and put it into the sink. Let it stand for three to five minutes.
Grate the Onions and Carrots
Meanwhile, cut off the ends of the onions, and peel off the outer layer. Cut them so they fit into the food processor.Grate the onions. Then grate the carrots. I like to add carrots because they add color and some sweetness to the kugel.
Mix All of the Ingredients
Next, a handful at a time, squeeze out the excess liquid from the potatoes.In a large bowl, mix together the potatoes, onions, and carrots. Then add and mix in the egg mixture.
Grease a 9x13-inch baking dish. Pour the mixture into the dish.
Bake the Kosher Potato Kugel
