Transcript:How to Make Whitefish Salad

Hi, I'm Stephanie Gallagher for About.com, and today, we're making a kosher whitefish salad. Let's get started.

Ingredients for the Whitefish Salad

For this recipe, you will need:
  • 1/2 smoked whitefish (you buy smoked whitefish as either a half or whole, and in this case, I asked the butcher to trim off the tail for me)
  • 1 lemon
  • 1/4 cup finely diced red onion
  • 1/3 cup mayonnaise
  • 1 Tbsp. sour cream
  • 1-2 Tbsp. chopped fresh parsley

Prepare the Fish for the Whitefish Salad

The hardest part in making whitefish salad is preparing the fish. It looks intimidating, but it's really simple. Just use a fork or or knife to separate the skin from the fish. The use your fingers to peel back the skin. It comes off easily as you can see.

Remove the fins and turn the fish over and peel back the skin on that side.

Now open the fish to reveal the bone inside. Gently pull the bones away from the meat and place the meat into a bowl.

Remove the rest of the bones and skin, and add all of the filleted fish to the bowl.

Now use your fork to begin flaking the fish to break it up and see if they are any small pin bones. Just pick them out and discard them.

You want to flake through all of the fish with your fork checking for bones, and then use your hands to make sure there aren't any small bones you've missed.

Make the Whitefish Salad

Cut the lemon in half and squeeze the juice over the fish. I hold the cut half in my palm and squeeze the juice through my fingers so I can catch any seeds in my hand.

Now add the red onion, mayonnaise and sour cream to the whitefish. Stir them all together. Add some freshly-ground black pepper, and the chopped parsley. Give it all a good stir.

Serve your whitefish salad on bagels or crackers.
