Transcript:How to Make Gluten Free Honey Cake
Hi, I'm Stephanie Gallagher for About.com, and today, we're making a gluten-free honey cake.
Ingredients for Gluten-Free Honey Cake:
- 3 cups gluten-free flour mix, such as Pamela's Ultimate Gluten-Free Baking and Pancake Mix
- 1-1/2 tsp. gluten-free baking powder
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt4 eggs, separated
- 3/4 cup granulated sugar
- 3/4 cup honey
- 1/4 cup vegetable oil
- 1 cup orange juice
- 1/4 cup applesauce
Mix Cake Batter in Separate Bowls
Preheat the oven to 350 degrees. Spray a 9-inch round cake pan with cooking spray. Combine the gluten-free flour mix, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl, and mix well. Now beat the egg whites until stiff peaks form. Now set them aside. In another bowl, combine the eggs, sugar, honey, oil, orange juice and applesauce. Mix until smooth.
Fold Cake Batter Gently
Now add the flour mixture to the egg mixture, about half at a time, whisking until well incorporated, like this. Now fold the egg whites into the cake batter, being careful not to over-mix them. It's okay if there are some egg white streaks showing. Pour the batter into the prepared pan, and bake for 45-50 minutes. I like to put the cake on a baking sheet in case some of the batter spills over. And here's your gluten-free honey cake. Thanks for watching.
