Transcript:Hot Chocolate Sticks

Hi, Cliff Wildman here with Food. Today I'm going to show you how to make hot chocolate on a stick. it's a very easy and fun recipe that makes a great gift and it tastes fantastic. This recipe and other great ideas can be found at Giver's Log.

Hot Chocolate Stick Mix Ingredients

For this recipe, you'll need :
  • a ziploc bag or a piping bag
  • a stick, like a coffee stirrer - I'm using some leftover lollipop sticks from another project
  • an ice cube tray
  • 8 ounces of chocolate - you can get bittersweet, semisweet, or milk chocolate, a high quality chocolate
  • 1/4 cup of cocoa
  • 1/2 cup of confectioner's sugar
  • a pinch of salt

Melt the Chocolate

The first thing we're going to do is sift the sugar and cocoa into a small bowl. You can set that aside. Next we'll break the chocolate up into small pieces as we'll be melting it soon. When that's done, heat some water to about ninety degrees. If you have a double boiler, you can use it but I have a bowl that fits perfectly here and hangs off the side and I'll be using that to melt the chocolate. Now it's very important to not get water in the chocolate, it will ruin the recipe. Once the chocolate is about two thirds melted, you can take the bowl off the water. The first thing you want to do after that is wipe the bowl and get all the water off. Go ahead and stir the chocolate until all those chunks have melted.

Fill the Molds With Hot Chocolate Mix

Now slowly stir in the cocoa/sugar mixture and the pinch of salt. Work this together really well, and once you have as smooth a consistency as you can get, we'll spoon this into the ziploc bag and cut the corner off. So take your bag with the chocolate and the ice cube tray and begin filling the ice cube tray with the chocolate this makes about 10 servings, so make about 10 cubes here. Once you have all the chocolate in the tray, shake it back and forth or tap it on the counter to make the tops even out.

Let the Mix Form

Once that's done, you want to leave the ice cube tray for a minute or two. You can now put the sticks in - you may have to hold them for a second or two, but they should stay in fairly easily. Now you can leave these on the counter and they will harden in a few hours, but I have one more step I want to take. So I'm going to put them in the freezer for about 20 minutes where they'll harden rapidly. Once they have been in for a while they do come out very easily.

Decorate the Hot Chocolate Sticks

I have some left over melted chocolate and some colorful sprinkles here so I'm going to cover a few of these with the leftover melted chocolate and the sprinkles to give a few of these a nice colorful punch.

Make Hot Chocolate From the Mix

So, let's make hot chocolate on a stick. Pour three quarters of a cup of milk or milk with cream - you can adjust that to taste and heat in the microwave for a minute to a minute and a half. You want it to be warm enough to melt the chocolate obviously. Stir for three to four minutes and your done. It will be one of the best cups of hot chocolate you'll have, especially if you use the high quality chocolate I mentioned earlier.
