Transcript:How to Make Tuna Sashimi in Wasabi Cream

Hello! I am Rich Vellante, Executive Chef of Legal Sea Foods in Boston, MA, for About.com Food. Today I'm going to show you how to make tuna sashimi.

Tuna Sashimi Ingredients: Choosing Tuna

So let's go over some of the ingredients that we have to work with here. No this is yellow fin tuna. So when you go to the fish monger you should asked for sushi grade yellow fin tuna.

Other Tuna Sashimi Ingredients

We have a few different components. The first one, let's start with the wasabi cream:
  • 2 tbsp of sour cream
  • 2 tsp wasabi powder
  • 2 tsp rice wine vinegar
  • 1 tsp sugar
Next is the sesame vinaigrette:
  • 1 tbsp of soy sauce
  • 2 tsp of sesame oil
  • 1/2 tbsp of lime juice
  • 1 tbsp of rice wine vinegar
  • tsp of fresh ginger
The third component is really the garnishes of this dish, and those garnishes are:
  • 1/4 of sea weed salad
  • 1/4cup of pickled ginger
  • blackening spice

Mix the Sashimi Wasabi Cream

Why don't we start out with the wasabi cream - 2 tablespoons of sour cream and then we add the tea spoons of the wasabi . Add in the sugar and 2 teaspoons of the rice wine vinegar. So what I've done here is, I have just made the sauce and now we have the wasabi cream.

Mix the Tuna Sashimi Sesame Vinaigrette

Now the sesame vinaigrette. I have my soy sauce, and that is one tablespoon, and 1 tsp of sesame oil, and I need some lime. Mix that all together and now we need to add a little bit of rice wine, 1 tbls of rice wine.

And now we need to add some fresh ginger. But what I'm doing is, I'm rubbing the spoon over the outside of the ginger. There is a coating, or skin if you will and I'm taking that all off. And essentially this is what you should end up with. So you make some slices of the ginger and add that ginger to the sesame vinaigrette.

Sear the Tuna

We'll dip the tuna into the blackening spice. I don't mix in the edges, but I mix in all the sides. So what I'm going to do is bring this over to the cast iron skillet. And what I've done is I've put this on the stove at a medium heat. And I want to sear each side for about 15 seconds.

Assemble the Tuna Sashimi

Now we'll build the plate. I've taken the sesame vinaigrette and I put it in a bottle. I have done the same with the wasabi cream. This makes it easier for you to work with. You can draw designs on it. I also have some of the sea weed salad, and a little bit of ginger. What we'll do is, we'll slice this tuna up now, and you'll layer this on the plate. And I'll put a little bit of this vinaigrette on top and around the fish.
