Transcript:Japanese Strawberry Daifuku DessertJi, I'm Natasha Levitan for About.com Food. Today I'm going to show you how to make strawberry daifuku.
Strawberry Daifuku IngredientsFor this recipe you will need:
- 1 cup mochiko sweet rice flour
- 1/4 cup sugar
- 2/3 cups water
- 6 strawberries
- 1/2 cups sweetened red bean paste
Prepare the Strawberries and FillingWash the strawberries in a collander in the sink and remove the stems. Cover the strawberries in sweetened red bean paste and set them aside.
Make the DoughMix the sugar and water together in a large saucepan and bring to the boil. Turn the heat off and add mochiko. Stir until smooth, then turn the heat on low. Heat for 2 more minutes, stirring often. Let cool for 15 minutes, stirring occasionally.
Put Together the Strawberry DaifukuWhen cool, take the mochi and make it into walnut sized balls then flatten them. Place a strawberry in the center of each mochi and bring edges together, pinching to close. Note: use mochiko on hands and mochi pieces to prevent sticking.
