Transcript:How to Make DorayakiHi, I’m Mamie Nishide of Japanese Cooking Studio in New York area. Here for About.com. I’m going to show you how to make Dorayaki. Dorayaki is like pancake sandwich filled with sweet red bean puree.
- 2 eggs
- 3 ½ oz. flour
- 1/2 tsp baking soda
- 2 oz. sugar
- 1 tablespoon honey or agave nectar
- 2 tbsp. black Sesame seed
- 3 tbsp. Sugar
- 1 can, 15 ounces azuki bean cooked in water no salt added
Prepare Dorayaki BatterSift flour and baking soda together. In a medium bowl, mix eggs and sugar, and honey. Add flour and baking soda to egg mixture. Add 1/2 tbsp. water and check the consistency. If you need it, add more water. Wrap the bowl with plastic wrap and let it rest for 30 min. to 1 hour in a refrigerator.
Heat the pan in low heat, then oil it lightly. Place black sesame seeds in the center of pan, then pore batter over it about 2 tablespoon. Makes 8 pancakes. While pancakes are still hot, place them in a plastic box and close it tightly to make moist pancakes.
Fill Dorayaki with Bean PureeDrain and rinse azuki beans in a strainer. In a food processor puree azuki beans with three tablespoons sugar. Ok. Let’s put it together. Take 2 pancakes and take one tablespoon of azuki beans puree and close it as a sandwich.
