Transcript:How to Make Curry Udon

Hi. I’m Mamie Nishide, with Japanese Cooking Studio. Here, in the New York area. Here for I’m going to show you how to make curry udon today. In English, udon noodle in curry flavored broth. Makes four servings.

To Make Curry Udon, You Will Need:

  • 1/2 Pound Beef, Thin Sliced Flour for Dredging
  • 2 Onions, Sliced
  • 1 Clove Garlic, Sliced
  • 1/2 Apple, Grated
  • 1 Carrot, Small Dice
  • 2 Boxes Japanese Curry Roux, Follow the Box Direction
  • 1 Oz Kelp
  • 2 Oz Dried Bonito Flakes
  • 9 Cups Water
  • 4 Servings Frozen Udon Noodles
  • 4 Stalks Green Onions

Sauté the Garlic and Onions for the Curry Base

Thinly Sliced Slice Beef 3 inches long and season with salt and pepper.Dredge the beef. In a medium sauce pot, heat the oil and sear the beef. Take the beef out. Sauté the garlic and onion in low heat until onions are caramelized.

Flavor the Heated Kelp Water with Bonita Flakes

In a medium pot add water and Kelp and set it aside for 15 minutes. If you have time soak over night and the next morning you have beautiful, beautiful Kelp stock. Start heating the Kelp water until almost to boil, turn the heat off. Then add Bonita flakes at once. Then wait for 3 minutes and strain with three-layered cheesecloth. Onions are caramelized. I’m going to add seared beef, Add carrots and apple. Add all the liquid. Cover and simmer for 1/2 an hour. Add curry roux and simmer until beef are tender. Skim off any fat from the surface during the process. Add 2 more cups dashi (more or less) if needed. See the consistency.Bring water to boil and cook frozen noodle until defrosted. Drain. So now, I am going to add udon noodle into curry soup. And cook until udon noodles are hot. Serve udon noodles in individual donburi bowl with hot curry soup. Garnish with green onions.
