Transcript:How to Cut Cucumber for Sushi

I am Hiroko Shimbo from Hiroko’s Kitchen in New York City, here, for About.com. Today I will show you how to cut cucumber for sushi.

Use a Fresh Cucumber

This is Kirby cucumber. You can use any cucumber, but, this comes from just market. Seasonal. Crisp. Juicy. Wonderful.

Using the Right Knife

Let me give you some knife advice. Well, any knife is good but not too small one. Larger one. Chef’s knife. I am using just a ceramic one. This is very sturdy ceramic knife, which cuts very sharp. Very clean. First cut the ends. And the size which I always look for is about one inch times four. A kind of a four inch. And then, this end I will cut off.

Peel and Cut the Cucumber for Sushi

This is about the half size of the Norri sheet. That’s why I’m cutting this into this particular thing. Now, you can use just a peeler. What I am doing now, is a kind of peeling. Not all off but peeling some skin. Or, actually, a kind of smoothing the surface. To get even kind of strip. Inside is kind of seedy. Let me first cut a kind of quarter inch wide. Perfect. This kind of thickness. Now, I’ve started to see seeds. So, just turn this, a quarter turn. And then still these seeds are left in the center.

So you just continue. And then, this part, you can snack on it or throw it away. And these pieces, you just pile them up and then into thin slice. Doesn’t need to be particularly this size. This is more a kind of free style. And then just keep them kind of together.
