Learn a Simple Japanese Toast
The most simple and common way to say a toast in Japanese is:
かんぱい(kanpai)
"Kanpai".
Raise your glass and say かんぱい (kanpai).

Learn a Formal Japanese Toast
If the toast is for a more formal occasion, such as a going away party, then you can say a toast in connection to a wish.
For example: スミスさんのご帰国後の成功と健康を願って乾杯
(Smith-san no gokikokugo no seikou to gogenkou wo negatte kanpai)
Here's a toast to Mr. Smith's success and good health after returning to his home country.
