Transcript:How to Make Vodka SauceHi, I’m Rachel Edelman for About.com Food. Today, I’m going to show you how to make you own vodka sauce.
Vodka Sauce IngredientsFor this recipe you will need:
- 3 tablespoons extra-virgin olive oil
- 3 cloves garlic
- 1 onion
- 1/4 cup vodka
- 28-ounce can whole tomatoes
- 1/2 teaspoons crushed red pepper
- Salt, to taste
- 3/4 cups evaporated skim milk
- 16 ounces penne pasta
- 12 fresh basil leaves
- 3/4 cups freshly grated Romano cheese
Cutting the VeggiesFirst prepare the vegetables. Hit the cloves of garlic with your knife. Peel off the skin. Cut the garlic cloves in half.
Next, cut off the end of the onion and slice it in half. Peel off the outer layer and dice the onion.
Cooking the VeggiesPour the olive oil into a large skillet over medium heat. When the oil is hot, add the garlic and the onion.
Sauté the, so the garlic is light brown and the onion is translucent. This might take about 5 minutes.
Pour the tomatoes and all the juices into a blender. I’m using Italian plum tomatoes for this sauce. Puree the tomatoes so they are smooth.
Adding the VodkaOnce the onions are cooked, add the vodka and let the alcohol burn off. You’ll see that it reduces and is soaked up by the onions and the garlic.
Next, add the pureed tomatoes, the crushed red pepper and a pinch of salt.
Simmering the Sauce, Cooking the PastaSimmer the sauce and stir it occasionally for about 30 minutes.
During this time, you should cook your pasta.
After the 30 minutes, add the evaporated milk (to the sauce).
If you want to make a thicker and heavier sauce, use heavy cream instead (of milk). Simmer the sauce for another 10 minutes.
Add Basil to the SauceMeanwhile, chop the basil. Do this by rolling the leaves and slicing across at a diagonal. When the sauce is done, add the basil.
Remove the skillet from the heat and add the grated cheese.
Combine Pasta and SauceStir it all together. Finally, add the cooked pasta and the sauce and gently combine until all the penne is cover. Serve with a little extra grated cheese and enjoy.
