Ingredients for Red Pasta
Here's a quick tip on how to make fresh red pasta.
- 1 Red Pepper
- 1/4 cup water
- 2 eggs
- 1 ½ cups all-purpose flour
- and a pinch of salt
How to Make Red Pasta
Slice the red peppers into strips removing the stems, seeds and ribs. Place the red pepper strips and water in a food processor then add the egg and salt. Cover, and blend till smooth.
Make a volcano shaped mound of flour with a well in it. Pour the mixture into the well and fill to the top of the rim. Stir into the flour from the bottom of the well with a fork until the dough in the center is smooth or shiny. Incorporate the flour from the outside of the well and knead for 1 minute.
Let rest. Roll to a very thin consistency on a floured surface or use a pasta roller. Cut the rolled dough into desired lengths. Finally, spread out on a rack to dry for 2 hours.
