Transcript:Low Fat Vegan Polenta

Hi, I'm Chef Kara Mickelson, owner of Creative Culinary Group. I'm here with About.com and today I'm gonna show you how to make a low fat vegan polenta.

Ingredients for Low Fat Vegan Polenta

So for this particular recipe, the ingredients are: 3/4 cup of polenta, and then you're gonna match that up with a 4:1 ratio of liquid -- I like to use a combination of water and mushroom stock, about 3/4 of a cup of almond milk, 2 tablespoons of brewer's or nutritional yeast, about 1/4 cup of olive oil, and then salt and pepper, and then on the top, I'm gonna use a little black truffle oil.

Make the Low Fat Vegan Polenta

First thing we're gonna do it take our mushroom stock and we're gonna pour that into the saucepan and bring that to a rapid boil. Now step two is we;re gonna just rain in the polenta while we're whisking. That's just a continuous movement, sprinkling in the polenta while you're also whisking the polenta, as it's going into the broth.

As the polenta starts to get thicker, it's easier if you switch over to a wooden spatula or spoon, versus a whisk, and then you're not scraping up the bottom of your saucepan. So now you can see that the polenta is getting to be a nice, creamy grain, and it still has a pourable consistency.

And what I'm gonna do is I am going to add some almond milk, and that will add a creaminess to it, without adding any dairy. Just want to pour that in, I have about 3/4 of a cup here, and you're just gonna have to use your own judgment on how much to actually put in because grains are manufactured in such a way that they're going to absorb the amount of liquid uniquely, meaning that some packages of polenta will require 3/4 of a cup of a liquid and others may require a cup. So you'll just be the best judge of that. And watch out when it starts to boil, because it gets to be like a hot lava.

Now what we're going to do as well is because we're not adding any cheese, we're gonna add what is called nutritional yeast and it's also a brewer's yeast, and it will give sort of a Parmesan cheese-like flavor. And a little pinch of seasoning, I like to use white pepper, especially since this is a light grain, and we're gonna add some salt. And add just a little bit of olive oil. Again, that will add a little bit of flavor.

Serve the Low Fat Vegan Polenta

So now that it's all cooked and you can see it has a really nice, creamy pourable consistency, we're gonna plate that. Now at the very end, what I like to do is add just a little bit of the truffle oil. Now we're just gonna finish off with a little herb garnish – I have some parsley here. And we can add a little bit more of that nutritional yeast. Voila, you're ready to serve! So here you have it, a low fat vegan polenta, which is just delicious.
