Italian Salsa Verde

Italian salsa verde is a parsley-based sauce flavored with salty seasonings like anchovies and capers. You can enjoy this easy salsa verde over pasta, meat, or fish.

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make salsa verde, an Italian, parsley-based sauce.

Salsa Verde Ingredients

For this recipe you will need:
  • 2 ounces anchovy filets
  • 1 ounce capers
  • 1-2 tbsp. of canned tuna
  • 1/3 cup olive oil
  • a large bunch of parsley
  • 1 lemon
  • pepper
  • 1 clove of garlic

Wash and Chop Salsa Verde Ingredients

Take the anchovy filets out of their container. Rinse them and then de-bone the anchovies. Next, rinse the capers and let them soak in lukewarm water for about a minute. Then drain them well. Hit one clove of garlic with the side of your knife to peel it. Take off the skin.

Take the parsley and remove any of the long stems. Place the parsley into a blender or food processor and pulse it until it is minced.

Combine the Salsa Verde Ingredients

Add the anchovies, capers, tuna, garlic to the parsley. Blend them all together Pour in half of the olive oil and squeeze half the lemon. Mix it some more. Add the rest of the olive oil and add the pepper. Blend one last time.

This sauce is like a parsley-based pesto and can be served with meat, fish, or pasta. You can store extra salsa verde in the freezer.
