Transcript:How to Make Pizza Dough

Hi I’m Elaine Lemm for Food and today I’m going to show you how to make homemade pizza dough. It’s very quick, very simple, let me show you how.

Ingredients for Making Pizza Dough

  • 2 ¼ tsp active dry yeast
  • 1 ⅓ cups warm water 105°F/ 42°C
  • 3 ½ -3¾ cups / 400-430 g all purpose/plain flour
  • 2 tbsp olive oil
  • A healthy pinch of salt
Mix the Water and Yeast

To start our dough, first we need to put the warm water into the mixer bowl. Add the yeast and just give that a little stir. And then I’m going to leave this for 5 minutes just to let the warm water start to activate the yeast.

Add Flour to the Mixture

Okay, this has had five minutes, what I’m going to do now is to add the flour to that mixture, a good pinch of salt, and 2 tablespoons of olive oil. Using the beater on the mixer it’s going to bring this together to form a very loose dough.

Mix the Dough Until Smooth

That’s ready. Now change the head of the mixer. You can do this on a work surface if you don’t have a mixer so don’t worry about that. If you’ve got a mixer with a dough hook, it makes the job easier. It’s going to take about 10 minutes to mix using the mixer, until we’ve got a lovely smooth and silky dough.

So, we’ve had a good 10 minutes there, and here’s our dough and look how silky that is, it is really really smooth. In this bowl here I’ve lined it with olive oil and in there I’m going to put the pizza dough, a bit sticky but don’t worry, and move it around in the olive oil. Take a piece of plastic wrap and cover.

This now needs to go into a warm place, not hot, just warm, an airing cupboard is a good place, and it needs to be about an hour until it has doubled in size and becomes very light and airy.

Roll and Cut the Dough

So it has had well over an hour in a warm place and it is very well risen, it has doubled in size. I’m going to take it out of the bowl onto this floured surface and we just roll this around a bit in the flour. You can see it is really light and airy, and we roll it into a ball.

Cut it in half.

So there you have your pizza dough. You need to let it rest now for 15 minutes. After 15 minutes it is ready to shape into any type of pizza you choose.
