Transcript:How to Make Lemon Chicken for Two

Chicken is a great dish for families but it's also a great for couples. Today I'm going to make Chicken Piccata for 2.

Ingredients for Lemon Chicken for Two

Here are the ingredients you'll need:

  • 2 split boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 c. all-purpose flour
  • 1 extra-large egg
  • 1/2 tbsp. water
  • 3/4 c. seasoned dry Italian bread crumbs
  • 3 tbsp. virgin olive oil
  • 3 tbsp. unsalted butter
  • 1/3 c. freshly squeezed lemon juice - about 2 lemons
  • 1/2 c. dry white wine
  • 1/2 c. fresh Italian parsley, chopped
  • 1/2 c. sliced mushrooms

Instructions for Making Lemon Chicken for Two

First we're going to take a chicken breast and place it between parchment paper which I'm going to fold over and I'm going to beat it with a mallet to make it thin into fillets. And pound it out to about a quarter inch thick. Sprinkle both sides with salt and pepper. Mix the flour, pepper and salt in a shallow plate. Add a half a tablespoons of water to an egg and beat thoroughly. And now place the bread crumbs on a third plate and dip the chicken in the flour and shake off the excess. Dip it into the egg mixture. Then finally dip it into the bread crumbs. Then place it on a plate.

Cooking the Lemon Chicken for Two

I'm going to turn the heat to Medium-High and add the olive oil so I can saute the chicken breasts. Continue to cook it on both sides until it gets a nice crust. You don't want it to burn but you want a nice crust on both sides of the fillet. After you've cooked the chicken breast for about 10 minutes, you want remove them to another plate and set them aside.

Making the Sauce for Lemon Chicken

We're going to make the piccata sauce now, I've added butter to a Medium-High heat pan I'm also going to add my Italian parsley and my mushrooms - saute them in the butter. I'm going to add salt and pepper. A squeeze of lemon juice. I'm also going to add the entire lemon and now that's it's picking up a boil again I'm going to add the white wine and let that simmer for just about 2 minutes.

Now I'm going to put the chicken breasts back into the sauce, it's come back to a little bit of a boil. We're going to let it all simmer together for about 10 minutes in the sauce.They are ready now, I'm going to plate them. I'm also going to add some of this delicious sauce that has the wine in it for a great topping for your Chicken Picatta for Two. Very simple and very delicious dish.Recipes are usually written for 4 to 6 people so you'll need to reduce them when cooking for just 2. Now don't worry it's not that hard.

Tips for Cooking for Two

Here are a three easy tips:

One: Simply scale down the recipe by dividing the measurements. For instance 1 cup in a recipe for 4 becomes ½ cup in a recipe for 2.

Two: Unless your baking where exact measurements are essential, after adding your reduced measurements, taste the food and add a pinch or two more if you think it needs it.

Three: Reduce the size of your cooking vessel. Use a smaller pot or baking dish. This will help keep the cooking time the same.
