Hi, I am Gretchen Siegchrist for About.com Food, and I am going to show you how to make a calzone.Calzone Ingredients
This recipe will make two large calzones. For the dough, you will need one and one half cups flour, one teaspoon salt, one teaspoon yeast, one half cup warm water, and one tablespoon olive oil. You will also need one cup ricotta cheese and one cup mozzarella cheese. You can add whatever kind of filling you want to your calzone. I am going to fill mine with sautéed onion and red pepper. You will also need some tomato sauce for topping the calzones.Make the Dough
To make the dough, combine the flour and the salt in a large bowl. Dissolve the yeast in the water, and then add the olive oil. Pour the liquid ingredients over the flour and mix these together, and then knead them for a minute or so with your hands. Transfer the dough to a greased bowl and cover it with a clean kitchen towel. We will set this aside for an hour or so to let it rise.Prepare the Fillings
While the dough is rising, we will prepare our fillings. Heat one tablespoon of olive oil over medium high heat in a skillet. Add the chopped onion and pepper and sauté them for about five minutes or so until they are soft. Mix together the mozzarella and ricotta cheeses in a small bowl.Roll Out the Dough
Coat your work surface generously with flour. When your dough has risen to twice its original size, punch it down to get rid of any big air bubbles. Take half the dough and roll it out into an approximately ten inch circle.Fill and Fold the Dough
Spread half of the cheese mixture out on the dough, leaving one inch or so around the sides. Top this with half the vegetables. Now, we will fold the dough in half and seal the edges together with a fork. Repeat this process to make the other calzone.Bake the Calzone
Sprinkle cornmeal onto a baking sheet and then transfer the calzones onto the sheet. Bake them at 425 degrees for fifteen minutes or so, until the crust turns golden brown.
