Transcript:How to Make Focaccia BreadHi, I'm Rachel Edelman for About.com Food and today I'm going to show you how to make Focaccia.
Focaccia Bread IngredientsFor this recipe, you will need:
For the dough
- 1 c warm water
- 2 1/4 tsp dry yeast
- 1 tbsp. olive oil
- 1 tsp salt
- 2 1/2 - 3 c. flour
- 1 thinly sliced red onion
- 1 tsp olive oil
- 2 tbsp sugar
- 2 tbsp chopped rosemary
- 2 tbsp grated Parmesan cheese
- salt and pepper
Prepare the Focaccia YeastFirst take the warm water and pour it into a standard mixer bowl. The water should be about 110 degrees. Sprinkle in the yeast and cover the bowl with a kitchen towel. Let it stand for about 5 minutes. Then stir it so all of the yeast can dissolve and wait a few minutes more.
Mix the Focaccia DoughAdd the salt to the flour and give it a quick mix. Next add the olive oil to the batter. Then, slowly add in the flour/salt mixture. Use the dough hook attachment to mix everything together into a dough. Once it's come together, knead for another 2 minutes.
Allow Dough to RiseMeanwhile, spray a bowl with non-stick cooking spray. Once the dough looks smooth and elastic, place it into the greased bowl. Turn the dough over, so it is greased on all sides. Then, cover the bowl with a towel and place it in a warm spot to rise for about an hour.
Prepare the Focaccia Dough for Cookingspray two 9 inch cake pans with non-stick cooking spray. Next, punch down the dough with your hands to get out the extra air. Then, divide the dough in half. Take each half and press it down into each pan.
Set the pans aside for 20 minutes so they can rise a little more before baking. Preheat the oven to 400 degrees.
Prepare the Focaccia ToppingA popular topping for Focaccia is caramelized onion and rosemary. To make this topping, heat oil in a large skillet over medium heat. add the onion and sugar. saute for 10 minutes so the onions are tender and golden brown. Stir in the rosemary, and then add a bit of salt and then sprinkle over a bit of pepper. Remove the onions from the heat and then spread the mixture on top of the dough. Finally top everything with 1 tablespoon of Parmesan cheese for each loaf.
Other toppings for Focaccia include roasted garlic, olives, wild mushrooms, and sliced tomatoes and basil. This a bread you can really make your own.
Bake the Focaccia BreadBake the loaves on baking sheets for 20-25 minutes so they are golden brown. Cool for 5 minutes before slicing. Serve warm and - enjoy.
