Transcript:How to Make Grilled Polenta

Hi, I am Gina Miller with food. Today I'm preparing Grilled Polenta.

What is Polenta?

Polenta is a very simple food known in America as Corn Grits. Polenta has become more of a delicacy over the last few decades, since awarding winning chefs have made minor adjustments to this simple dish.

Instructions for Making Grilled Polenta

To prepare Grilled Polenta, you must first make the polenta.

Ingredients for Polenta

To make Polenta you will need corn grits.

You will find at your local market many varieties of corn meal, yellow, white or simple corn grits, which is what I have chosen today for my Recipe which will Serve 4 people. To make polenta you will need:
  • 3 cups of water or 3 cups of organic chicken stock (if you want a more savory flavor.)
  • 1/4 tsp of salt
  • 1 cup dry coarse corn grits or polenta
  • Bring 3 cups of your liquid and salt to a boil.
  • Pour in the dry corn grits or polenta slowly, while stirring continuously
  • Lower heat and cook for 5- to 10 minutes and stir occasionally.
Please follow the instructions on the package of the dry corn grits or polenta you purchased: as the cooking times differ.

The brand I bought requires 5-10 minutes to cook and sitting for another 5 minutes.

Pour warm polenta into round muffin pan, filing only half full. Cover and refrigerate overnight.

Grilling the Polenta

To Grill the Polenta, you will need:
  • 6 1/2 inch round slices of cold polenta
  • 2 Tbsp extra virgin olive oil
  • Very hot grill

Turn the polenta onto a cutting board. It should be completely molded into a round shape disc. brush each one with olive oil on both sides.

Heat a grill pan or gas grill on medium high setting,

Place each slice diagonally across the grill and let it cook for about 10 minutes or until dark-brown grill marks appear.

Don't move the polenta around, until you are ready to flip OR overcrowd the grill or pan. Flip and grill the other side until grill marks appear, approx. another 10 minutes. Serve hot.
