Transcript:How to Make Chicken Bruschetta

Hi, I'm Stephanie Gallagher for About.com, and today we're making chicken bruschetta with spinach and mushrooms. Let's get started.

Ingredients for Chicken Bruschetta

For this recipe, you will need:
  • 1 loaf of good crusty Italian bread
  • 2 cloves of garlic - leave 1 whole and chop the other one
  • extra virgin olive oil for drizzling
  • 1 lb. boneless skinless chicken breasts
  • salt and pepper
  • 1 Tbsp. butter
  • 1/2 cup sliced mushrooms
  • 2 cups baby spinach
  • 1/4 cup cream
  • 1/4 cup of grated Peccorino-Romano cheese

Instructions for Making Chicken Bruschetta

Slice the bread into thick slices.

Toast the bread over hot coals or on a grill pan.

Cut the garlic clove in half, and rub the cut half over the toasted bread. This gives your bruschetta great flavor. Drizzle with olive oil.

Drizzle about a tablespoon of olive oil in a large skillet, and heat over medium heat. Season the chicken breasts with salt and pepper. Place them in the hot skillet, seasoned side down. Now season the other side with salt and pepper. Cook the chicken for 3-4 minutes, then turn and continue cooking until cooked through. It should take 8-12 minutes, depending on how thick your chicken breasts are.

OK, remove the chicken breasts to a plate and cut them into bite-sized pieces.

Melt the butter in a large skillet over medium heat. Add the mushrooms, and let them brown. Add the garlic, and stir -the cast iron skillet is nice because it browns the mushrooms, but it can also burn the garlic, so you need to stir it to keep it from burning.

Now add the spinach, and toss until wilted.

Add the cream and when it starts to bubble, add the chicken. Cook, stirring occasionally, until the cream is almost cooked off. Sprinkle on a few tablespoons of the cheese.

Now top the bruschetta slices with the chicken mixture, and sprinkle on the remaining cheese.

And here's your chicken bruschetta.
