Hi, I'm Natasha Levitan for About.com Food. Today, I'm going to show you how to make Indian chai.Chai Ingredients
For this recipe, you will need:- 1 cup milk
- 1 cup water
- 3 tablespoons black tea leaves (use strong teas like assam, darjeeling, nilgiri or ceylon)
- 1 teaspoon ginger paste
- 3 cardamom pods
- 2 black peppercorns
- 2 cloves
- 1/4 teaspoon ground cinnamon
- 1 teaspoon ground fennel
- 2 teaspoons sugar
Crush the Cardamon Pods
Crush the cardamon pods with a side of the knife. The pods will open to release small black seeds. We will not discard the green shell, but use the whole thing in our tea mixture.Combine the Milk, Water, and Spices
Heat water and milk in a small saucepan on high heat until the water and milk begin to boil.As the mixture begins to rise, add in the spice mixture and stir it with a whisk. Turn the heat down to low.
Add the Tea Leaves
When the liquid rises to a boil again, add tea leaves and stir. Cover your saucepan with a lid and allow it to brew for two minutes, until the tea color turns brown, like coffee with milk.Strain the Chai Tea
