Transcript:How to Make Sambar
Hi, I am Anthony for About.com and today I am going to show you how to make sambar, which is a traditional South Indian dish.
Ingredients for Sambar
To cook this sambar you will need:
- 2 cups yellow lentils
- 4 tbsp sambar masala
- 1 cup diced eggplant
- 1 cup diced potato
- 1 onion, diced
- 10-12 okra or green beans
- 1 cup diced pumpkin
- 1 tbsp of tamarind
- 3 tbsp ghee
- 1 tsp mustard seeds
- 8-10 curry leaves
- 3 tsp dry red chilies
- Roughly chopped cilantro leaves
Prepare Lentils and Vegetables for Sambar
Place the lentils and sambar marsala into a pot with enough water to cover them and boil until they are soft and tender. Once cooked, they will resemble a yellow thick soup. Add the tamarind paste to the lentil soup, simmer for 5 minutes and mix well to combine into the lentil mixture. First add the chopped potatoes to the lentils and only simmer until the potatoes are half cooked. You can test the potatoes by sliding a knife into them. Then add all the other vegetables to the lentils and continue simmering until the vegetables are cooked through. Be careful not to overcook the vegetables.
Add Spices to Sambar
Now it is time to add some heat to the dish. First heat the ghee in a small pan. Add the dry red chilies, mustard seeds and curry leaves and fry until the popping stops. Then add to the lentils and mix well. The sambar is ready to serve. Place in a bowl and garnish with chopped cilantro and serve with some roti or naan bread.
