Transcript:GajrelaHello, my name is Mala Desai for About.com Food. Today I will be making gajrela, or carrot delight. This is a specialty from the Punjab region of India.
Gajrela IngredientsTo make this dish, you will need:
- 1 pound carrots, finely grated
- 3 cups 2 percent milk
- 1/2 cup heavy cream (optional)
- 1 cup sugar (raw sugar is preferred)
- 1-inch cinnamon stick that can be removed later
- a few cloves
- a few crushed cardamon seeds
- 2 tablespoons raisins
Combine the Gajrela IngredientsPlace the grated carrots in a cooking vessel with a very heavy bottom. Add milk, cinnamon, cloves, and cardamon.
Cook on high and then low heat, stirring regularly until the milk has almost completely dried up. This will take quite a while. If you rush the process, it will not taste the same.
Add Sugar to the Gajrela MixtureAdd the sugar and cream and continue stirring. Once the sugar has dissolved, stir constantly. The mixture must not stick to the bottom of the pot at any point during cooking.
Serve the GajrelaThe gajrela is ready when milk has completely dried and carrots leave the sides of the cooking vessel.
Decorate with ground almonds, cashews, pistachios, and walnuts and serve while hot. Heavy cream can be served on the side instead of adding during the cooking.
