Transcript:Baked Coriander Tilapia

Hello, my name is Mala Desai for About.com Food. Today I will be making coriander tilapia.

Baked Coriander Tilapia Ingredients

To make this dish, you will need:
  • about 2 pounds fresh tilapia
  • 1 cup fresh coriander leaves or cilantro
  • 1/2 cup water
  • 1 1/2 tablespoons shredded, unsweetened coconut
  • 1 1/2 tablespoons roasted peanuts
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon salt
  • 1 tablespoon ground fresh ginger
  • 1 large garlic clove
  • 1 or 2 fresh green chili peppers
  • juice of 2 limes

Blend the Coriander Tilapia Ingredients

After washing the tilapia, add a little salt, black pepper, and lime juice and set aside.

Prepare all the other ingredients as a chutney by blending them into a smooth paste, adding a little water if necessary. This mixture can be refrigerated for about 1 to 2 days.

Marinate the Tilapia

Preheat the oven to 350 degrees. Brush the baking pan with a few drops of vegetable oil.

Marinate the tilapia filet on both sides with the coriander chutney and let stand for about 10 to 15 minutes.

Bake and Serve Tilapia

Place the baking pan in the oven and cook from 20 to 22 minutes, or until fish is done. Serve with rice or grilled vegetables. I recommend asparagus and roast potatoes.
