Hi, I am Chef Evelyn Paul and today I am going to show you how to make spaghetti squash with Mediterranean sauce.Ingredients for the Spaghetti Squash With Mediterranean Sauce
You will need:- 1 spaghetti squash
- 1 leek
- 4 slices of bacon, cut in a 1-inch dice
- 4 large garlic cloves, chopped
- 3 tablespoons of flour
- 1 cup of white wine
- 1-3/4 cups of chicken broth
- 2 large boneless chicken breast halves, cut into 1 inch pieces
- 1 teaspoon of fresh thyme leaves
- 4 fresh sage leaves, chopped
- 1 cup heavy cream
- 2 plum tomatoes, chopped into 1/2-inch dice
- 1/2 cup of black olives, sliced
- 1/2 cup of parmesan cheese, grated
- 1/4 cup chopped parsley for garnish
Prepare the Squash for Spaghetti Squash With Mediterranean Sauce
Preheat the oven to 375 degrees Fahrenheit. You will first need to prepare this spaghetti squash for cooking by pricking the squash all over with the fork. Place the squash in a bacon dish, and bake for 1 hour. Remove from the oven and let cool.When cool enough to handle cut the spaghetti squash in half length wise with a serrated knife. Scoop out the seeds, then shred the pulp with the fork into spaghetti-like strands.
Make the Spaghetti Squash With Mediterranean Sauce
Cut the leek in half length wise and rinse thoroughly in a sink full of water to remove the dirt and cut the leek into strips about 3 inches long and half inch wide. Next heat a large heavy skillet over medium heat. Gently saute the bacon and the leeks, stirring often until the leeks begin to caramelize.Next, you will add the garlic and cook for one minute. You will then stir in the flour, and cook for two minutes. Next, slowly pour in one cup of white wine, stir and cook for two minutes, then add the chicken broth and bring to a simmer.
You will then add the chicken, the thyme, sage, salt and pepper and cream. Gently simmer until the chicken is cooked through and the sauce thickened, about 5-8 minutes. Add tomatoes, black olives and parmesan cheese, and cook only until heated through. Serve over spaghetti squash and sprinkle with your chopped parsley. And that's how you make spaghetti squash with Mediterranean sauce.
