Hi guys, Greyson Ferguson here with About.com. Today we are going to cook Cornish game hens.Ingredients for Roasted Garlic Cornish Game Hens
To start, you'll need:- 4 Cornish game hens
- salt and pepper
- 1 quartered lemon
- 4 sprigs of fresh rosemary
- 3 tablespoons of olive oil
- 2 heads of garlic, cut in half
- 1/3 cup of white wine
- 1/3 cup of chicken broth
Cook the Roasted Garlic Cornish Game Hens
Coat the hens with some of the olive oil, then sprinkler over salt and pepper. Insert one sprig of rosemary, one garlic half and a lemon quarter into each of the four hens. Insert the hens into an oven set at 450 degrees for 25 minutes.After the 25 minutes, reduce the heat down to 350 and allow it to cook for another 25 minutes.
While the hens cook for the second 25 minutes, mix up the wine, chicken broth and the rest of the olive oil, then coat each of the birds. This helps add flavor to the crispy skin of the bird as it tries.
Remove the birds from the oven and cut the hens down the middle of the breast bone and back. This splits the bird up into two different even sections.Serve each half of the bird with available juices still in the cooking pan.
