Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make pecan sandies.

Pecan Sandies Ingredients

For this recipe, you will need:
  • 1 cup butter
  • 3/4 cup dark brown sugar
  • 1 egg yolk
  • 1/2 cup ground pecans
  • 2 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon cinnamon
Preheat oven to 325 degrees, and line two cookie sheets with parchment paper.

Combine the Pecan Sandies Ingredients

In the bowl of an electric stand mixer, cream the butter and the brown sugar on high speed. Add the egg yolk, pecans, and flour. Mix until combined well.

Roll and Slice the Dough

Divide dough in half and using parchment paper. Roll each half into a long two-inch-wide cylinders.

With a butter knife, thinly slice each log into 1/4-inch slices. Place on the prepared cookie sheets.

Bake the Pecan Sandies

Bake for 20 minutes, and then remove from the oven.

In a small bowl, mix the sugar and cinnamon. While the cookies are hot, roll them on both sides in the cinnamon and sugar mixture.

Set on a rack to cool completely. Enjoy with a cup of tea
