Transcript:How to Make Ricotta CheesecakeHi there, I am Jodina of ItalianoWithJodina.com. I am an Italian language and cooking teacher in the San Diego area. Today we're going to make Ricotta Cheesecake.
Ingredients for the Ricotta CheesecakeWe'll need:
- 6 eggs
- 2/3 cup of white sugar
- 1/3 cup all-purpose flour
- some vanilla extract
- 1/4 teaspoon cinnamon
- 2 teaspoons orange zest
- a fine grater to make that orange zest
- 2 pounds of ricotta cheese
- a spatula to smooth it
Make the Batter for the Ricotta CheesecakeSo, we'll begin by smoothing the ricotta cheese to work out any of the lumps and the graininess of the ricotta cheese, which is a natural part of ricotta cheese. But before we blend in the other ingredients, we will want to get it as smooth as possible.
So now we'll smooth in the sugar, our 2/3rd cup of granulated sugar and our 1/3rd cup of flour. Smooth that into our ricotta cheese and now we're going to blend 1 egg at a time into this mix. Okay. And what comes next is to blend in our 1/4 teaspoon of cinnamon, 2 teaspoons of vanilla extract.
Now let's go ahead and make some orange zest. Basically you grate the rind of the orange; this gives a very tangy flavor. You can also cook with lemon zest and our pinch of salt. Okay. So now that our batter is mixed up, it's time for us to butter and flour our cake pan, so that when we remove the cheesecake it doesn't stick to the pan that we've baked it in.
Bake the Ricotta CheesecakeOkay. And now we're going to pour our batter into our ready and waiting cake pan. And there we go. And now I'm going to add this cake pan to our preheated 300 degree oven and we're going to bake it for 1-1/4 to 1-1/2 hours. And there you have it, voila: ricotta cheesecake.
