Pickled beets are excellent on a relish tray or as a salad-topper. So let's get started. This recipe comes from The All New Good Housekeeping Cookbook. Your prep time is 24 hours, your cook Time is 40 minutes and your total Time is 24 hours and 40 minutesIngredients for Pickled Beets
Ingredients you will need are:- 2 bunches beets with tops (2 pounds)
- 3/4 cup cider vinegar
- 1/2 cup sugar
- 1 Tbsp pickling spices
Instructions for Making Pickled Beets
In preparation for you beets, trim all but 1 inch of stems from beets. In big, thick boiling pot, combine beets and enough water to cover. Heat to boiling over high heat. Reduce your heat, cover and simmer until tender, about 20 to 30 minutes. Drain the liquid, and reserve 2 cups beet liquid. When cool enough to handle the beets, cut into 1/4-inch thick slices and place in medium bowl. In nonreactive saucepan, heat reserved beet liquid, vinegar, sugar, and pickling spices over medium heat, stirring frequently, just until sugar has dissolved; pour over beets, and refrigerate overnight or up to 1 week.
