Hi, I'm Chef William Richards for About.com. Here's a great way to recycle last night's mashed potatoes. "Mashed Potato Cakes" are a hearty side dish for any meal - from breakfast to dinner.

Ingredients for Mashed Potato Cakes

Here are the ingredients that you'll need:
  • 1 pound Leftover mashed potatoes
  • 1 cup of shredded Swiss cheese
  • 2 large eggs
  • 1 thinly sliced green onion
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1 Tablespoon oil

Instructions for Making Mashed Potato Cakes

Beat the 2 eggs and blend them into the potatoes along with the cheese, green onion, prepared mustard, and salt and pepper. Form the potato mixture into patties about ½ inch thick. Heat up a large skillet and add a tablespoon of oil. Fry one side of the potato cakes until they're golden brown then the other until the potato cake is nice and crispy.
