Transcript:How to Make Mashed Potato CakesHi, I'm Chef William Richards for About.com. Here's a great way to recycle last night's mashed potatoes. "Mashed Potato Cakes" are a hearty side dish for any meal - from breakfast to dinner.
Ingredients for Mashed Potato CakesHere are the ingredients that you'll need:
- 1 pound Leftover mashed potatoes
- 1 cup of shredded Swiss cheese
- 2 large eggs
- 1 thinly sliced green onion
- 1 teaspoon prepared mustard
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1 Tablespoon oil
Instructions for Making Mashed Potato CakesBeat the 2 eggs and blend them into the potatoes along with the cheese, green onion, prepared mustard, and salt and pepper. Form the potato mixture into patties about ½ inch thick. Heat up a large skillet and add a tablespoon of oil.
