Transcript:How to Make Figgy Pudding

Hi, I'm Jen D'Amore for About.com, and this video is all about how to make figgy pudding, using a recipe from About.com's Home Cooking site.

Ingredients for Figgy Pudding

You'll need:

  • 1/2 cup (1 stick) butter, at room temperature
  • 2 eggs
  • 1 cup molasses
  • 2 cups dried figs (about 1 pound), stems removed, chopped fine
  • 1/2 teaspoon grated lemon peel
  • 1 cup buttermilk
  • 1/2 cup walnuts, chopped
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Make the Batter for the Figgy Pudding

Cream the butter until fluffy, then add the eggs and the molasses and beat again. Add the figs the lemon peel, buttermilk, and walnuts and blend for 1 minute. Then add the flour, baking soda, baking powder, salt, cinnamon, and nutmeg, and blend until everything is incorporated.

Bake the Figgy Pudding

Pour the batter into a greased and flour 8 by 4 inch souffle dish or loaf pan, and bake for 1 hour at 325 degrees, or until a toothpick inserted in the center comes out clean. Spoon out or slice the pudding to serve and garnish with whipped cream.
