Caramelized Chestnut Ingredients:
- 400 grams chestnuts
- 1 cup sugar ( 250 grams)
- 1/2 cup water
Roast the Chestnuts
First you need to preheat oven to 350°F.Cut an "x" shape on one side of the chestnuts. If uncut, thy may blow away in the oven.Place all chestnuts with the x sides up on a large baking sheet over parchment paper.Bake chestnuts on the oven until slightly dried and a shade darker, about 30 minutes. Remove baking sheet from oven and, carefully, pop each chestnut from its shell. (If chestnuts are not removed easily, they have not been roasted long enough and you should add them for few minutes in the oven. Place shelled chestnuts in a bowl. Set aside.
Mix the Caramel Sauce
Now comes the tricky part. Choose a heavy sauce pan to evenly heat the sugar. Also you should consider that the pan to be light color to help you see the sugar color. Using a ration of 2 to 1 sugar in water , Cook over moderate heat, swirling and shaking skillet ( Stir only until the sugar dissolves in the water, otherwise you will crystallize the sugar! Let cook without stirring till When caramel is deep golden. Remove from heat and put aside.
Coat Chestnuts in Caramel
Add 1 chestnut to caramel and evenly coat by turning with 2 forks, then transfer with forks to a sheet of foil to cool. Coat remaining chestnuts in same manner. If caramel starts to harden while coating chestnuts, melt over moderately low heat, stirring.Place in a nice plate and serve.Thank you for visiting About.com
