Transcript:How to Make Braised Oxtails

Hi, I'm Gary Chisholm with About.com, and today we're making braised oxtails, a recipe you can find on About.com's Homecooking site. Now to be honest I thought oxtails would be hard to find. But after a trip to the supermarket, I was ready to go.

Ingredients for the Braised Oxtails

For this recipe you'll need:
  • 3-1/2 pounds of oxtail
  • 4 carrots
  • 1 medium onion
  • 4 cloves of garlic
  • 1 15-ounce can of chopped tomatoes
  • 3/4 cup of chicken broth
  • 1 tablespoon olive oil
  • 1-1/2 teaspoons of ground ginger
  • salt
  • red pepper
  • allspice

Brown the Meat for Braised Oxtails

Heat the olive oil in a large pot over medium heat. Brown the oxtails in batches, about five minutes for each batch. Take each batch out with a slotted spoon before adding in the next batch. Add the chopped onion and garlic to the drippings in the pan and cook for a few minutes until the onion is translucent.

Stir in the chopped carrots and the tomatoes. Stir in chicken broth, ginger, salt, red pepper, and allspice and heat to a boil. Stir in the oxtails. Cover and put in the oven. Bake it at 275 degrees for two hours.

Tips for Finishing the Braised Oxtails

When they're done, the meat will be very tender. Transfer the oxtails to a serving dish. Skim the fat off the liquid in the pot and pour what's left over the oxtails.This dish is easy, delicious, and sure to impress your guests.
