Transcript:How to Make Black Bean Cakes

Hi, I'm Gina Miller with Food and today I'm making black bean cakes, based on the recipe found on the Home Cooking site. Black bean cakes make a great appetizer or side dish and it's a great way to use up leftover beans.

Ingredients for Black Bean Cakes

Here are the ingredients you'll need:
  • 1 cup dried black beans
  • 2 Tablespoons olive oil
  • 1 carrot, peeled and coarsely chopped
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 2 Tablespoons balsamic vinegar
  • 3-1/2 cups chicken broth
  • 1 cup dried bread crumbs
  • 1/2 red bell pepper, seeded, deribbed, and finely chopped
  • 2 green onions, white part and 2 inches of green tops, finely chopped
  • 1 Tablespoon minced fresh parsley
  • Salt and freshly ground black pepper to taste
OK, here's how to make some great black bean cakes.

Prep the Black Beans for Black Bean Cakes

First rinse the beans in cold water. Discard any broken or bad beans. Then place the beans and water in a large saucepan. Cover, and bring the water to a boil for 1 minute, then remove from the heat and let sit for 1 hour.

Next heat the olive oil in another saucepan over medium heat. Add the carrot, green onion, and garlic. Saute and stir over low heat for 3-5 minutes, or until the onion is translucent. Now drain the beans and add them to the carrot, onion and garlic mixture along with a bay leaf.

Next, add the balsamic vinegar and chicken stock, then bring to a boil over medium heat. Now add the chopped onions. Reduce heat to low and simmer the beans uncovered until they are tender, about 50 minutes to 1 hour. Don't let all of the liquid evaporate; add more chicken stock if necessary.

Form the Black Bean Cakes

After the beans are tender, remove the bay leaf. Next puree 1/2 cup of the cooked beans in a food processor, then stir the puree back into pot of beans. Let cool. Now add the bread crumbs, red pepper, and parsley.Season with salt and pepper then form the beans into patties.

Here's a tip: If the mixture is too loose to form patties, add more bread crumbs. You can also use a cookie cutter to help achieve an interesting and fun look.

Cook the Black Bean Cakes

Finally dredge the black bean cakes lightly in flour and saute in oil over medium-high heat until golden brown. Usually about 3 minutes per side will result in beautiful black bean cakes. Serve with salsa, sour cream or even guacamole.
