Gluten-Free Salmon Pasta Salad

Hi, I'm Kristina Keller for About.com Food. Today I'm going to show you how to make a delicious and healthy gluten free salmon pasta salad. For those of you who don't know, gluten is a protein found in wheat, rye and barley.

Salmon Pasta Salad Ingredients

All of the ingredients used in this recipe are gluten free. They include:
  • lemon
  • red onion
  • baby carrots
  • basil
  • oregano
  • salt and pepper
  • pasta
  • hummus
  • salmon

Add Pasta and Salmon

Now this is a recipe made for 2, so before-hand I already prepared about 1/2 pound of gluten free pasta that I am just going to dump into our bowl. Right after the pasta you're going to add one can of salmon. I use canned salmon and I prefer to rinse and drain it before I add it to my salad. You can also use fresh salmon with this recipe and cook it however you'd like it.

Add and Mix Ingredients

After I add the salmon, I like to add the juice of half a lemon to this pasta salad. The lemon just really brings out the flavor and the overall freshness of the salad. Now I'm going to add a half a cup each of red onion and chopped up baby carrots. Now I'm just going to mix everything together. Next, we're just going to add 1 tsp of basil, and 1 tsp of oregano, a pinch of salt, a little bit for taste, and a little bit of pepper -- just to your liking. Give that a little bit of a mix. There we go- it looks so delicious!

Stir in Gluten Free Hummus

Okay now that we've got everything mixed together it's time to add the hummus. Hummus is a Mediterranean dish made out of chickpeas and sesame tahini flavored with lemon juice, garlic and oil. There are many varieties of hummus. They include sun-dried tomato and basil, roasted red pepper, scallion. It doesn't matter, but today I m going to use plain. Now I'm adding a half cup of plain gluten free hummus to the pasta salad. Give that a good mix -- look at that. Look how beautiful everything is blending together.

Taste and Refrigerate

Okay, our pasta salad is all mixed up. Now it's time for a taste, look how delicious this looks. It is good, just needs a little bit more pepper. Perfect, there we go, let's mix that up. This pasta salad needs to go into the refrigerator for a few hours before serving.

Easy Alternate Dip

One last thing I'd like to show you about this recipe is that it can be easily turned into other dishes. I made a wonderful salmon dip by simply omitting the pasta. This dip can be served with gluten free chips or crackers – whatever you prefer.
