Transcript:Chicken Scrumptious CasseroleHi, I'm Keith Dunlop for About.com Food. Today I am going to make an old family recipe for chicken casserole known as Chicken Scrumptious.
The word casserole is French for "stew pan" and illustrates how this dish is cooked and served in the same dish.
Chicken Scrumptious Casserole IngredientsTo make Chicken Scrumptious, you will need:
- 2 cups cooked chicken, cutlets or parts
- 2 cups lightly steamed fresh broccoli
- 1 can of cream of chicken or mushroom soup, depending on your preference
- 1/2 cup mayonnaise
- 2 teaspoons lemon juice
- 1/4 tsp curry powder
- 2 tablespoons milk
Combine the Chicken and BroccoliWash the chicken, and braise the meat in olive oil for about 15 minutes on medium-low heat.
Combine the cooked chicken and broccoli in a 13-inch x 9-inch casserole dish or a casserole dish roughly the same size--whatever you have on hand. Sprinkle with salt.
Mix the IngredientsNow, take a mixing bowl and combine the soup, mayonnaise, lemon juice, curry powder, and milk. Pour this mixture over the chicken and broccoli.
Bake the Chicken Scrumptious CasseroleThe entire dish bakes in the oven at 350 degrees for 30-40 minutes. When your casserole has finished baking, remove it from the oven. It's now ready to serve--reminds me of home when I was a kid.
