Transcript:How to Boil an Egg Perfectly
Hi, I’m chef Roblé for About.com. Today we’re gonna learn how to boil the perfect egg.What Is a Perfect Hard Boiled Egg?
By "perfect" I mean perfect in color: bright yellow yolks all the way through. Not overcooked, not undercooked. In this pot I have 6 eggs. You can cook as may as you want or as few as you want.Fill Pot With Cold Water
The eggs are in this pot with cold water, the water must be cold. Fill the water 1 inch over the top of the eggs. This insures perfect cooking. We’re gonna bring the eggs to a boil over high heat. Once the eggs come to a nice rolling boil like this, what you want to do is to turn of the heat.Remove From Heat and Cover
Cover and let them sit for exactly 12 minutes. While the eggs are sitting you want to make yourself what we call in the kitchen and ice bath which translates into a big bowl of ice water which you’re gonna use to shock your eggs, to rapidly cool them. This will prevent overcooking and make them a lot easier to peel later on.Put Eggs in Ice Bath
So after they sit for 12 minutes we’re gonna take them right out of this pot and let them sit in this ice bath. And this is how you peel the egg. Tap it around, tap it on the bottom. And just roll it around. Roll it all around the cutting board and it loosens everything up. And right over some water. Comes of so easily, so perfectly, so beautifully.And this is how you know that your egg is perfect. Gonna cut right through the middle. And look at that, look at that yolk. Perfectly yellow all the way through. No discoloration around the sides. This is a perfect hard boiled egg.
