Transcript:Apple Cider Pork Tenderloin

Hi, I’m Roblé for Today I’m going to show you how to make a pork tenderloin with a very delicious apple cider brine. Here we go.

Ingredients for Apple Cider Pork Tenderloin

Here are our ingredients.
  • 1 pound of pork tenderloin
  • 2 cups apple cider
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • kosher salt
  • black pepper
  • blended olive oil

Combine Wet Ingredients

Take a bowl and combine all of your wet ingredients. Take a fork and mix it around a little bit to incorporate everything together.

Allow Pork to Marinate

Take your pork loin and submerge it right in the liquid. What you have here is called a brine. What it does is to open up the meat and flood flavor and side. It also hydrates the meat making it very moist very flavorful very delicious. You want to place this in your fridge and let it marinate for 15 minutes. After 15 minutes you want to come back and flip it over and let it sit for 15 more minutes.

Season the Pork Tenderloin

So, I have let this pork marinate for a half an hour. Let’s remove it from the marinade and pat it dry with a paper towel. So now we are going to season the pork tenderloin. Drizzle over a little bit of the blended olive oil. Roll the tenderloin around in the oil to fully coat. Now season the tenderloin all around with salt and pepper. Season very liberally. Let this rest for about five minutes before you start to cook it.

Sear Pork Tenderloin

So here I had a screaming hot cast iron pan. Super hot over high heat. I’ve taken my pork tenderloin and cut it in half so it can fit nicely within the pan. I’m going to add that right into the pan and let it sear. We want to brown it all around and turn it continuously as it browns. I’m going to drizzle in a little bit of blended oil.

Cook to Medium

Once it’s browned all around we will place it into a 375° oven. We will cook it to medium. I like my pork tenderloin cooked to medium. If you like it well done and took it to well done. It should take about seven minutes for medium and 10 minutes for well-done. So my pork is out of the oven. To cook it to medium use a thermometer and make sure you cook it to 155°. If you want it well done push up the temperature to about 170-175°.

Finish with Glaze

Now we have one more treat. In the same pan we just cooked the pork. We are going to take it and put it over top of medium-high heat. Once the pan is hot we are going to add in about a cup or so of the brine. Let it evaporate. It is going to condense down into a nice glaze that we can pour over our pork. It is going to be delicious. A nice quick and easy sauce. You want to get in here with a pair of columns and scrape up all of the tiny bits on the bottom of the pan. That is where all the flavor is. So here you see our glaze is nice and thick. I’m going to reserve this on the side. I’m going to pour this over the pork after I slice it.

Serve and Enjoy Apple Cider Pork Tenderloin

So here is our pork. I’ve let it rest for about five minutes. Now I’m going to go ahead and slice it. You can see that it is cooked to a perfect medium. I’ve served it up with a nice side salad. It would go great with some veggies, mashed potatoes, rice or whatever you would like. Here is our quick sauce. Let’s drizzle of a bit of that on top and you are ready to eat.
