Tomato and Rosemary Butter

This classic flavored butter is made with sun-dried tomatoes, goat cheese, and fresh rosemary. Try it with tea sandwiches or paired with hors d'oeuvres.

Hi, I'm Natasha Levitan for About.com Food. Today I'm going to show you how to make sun-dried tomato and rosemary butter.

Tomato and Rosemary Butter Ingredients

For this recipe, you will need:
  • 10 sun-dried tomato halves
  • 1 stick unsalted butter at room temperature
  • 1/2 cup goat cheese at room temperature
  • 1 tablespoon chopped rosemary

Prepare the Sun-Dried Tomatoes

Put the tomatoes in a medium bowl, and pour enough hot water to cover them. Soak the tomatoes until they are softened, about 5-10 minutes. Drain the tomatoes and chop them into fine pieces.

Chop the Fresh Rosemary

Rinse the rosemary sprigs, and pat them dry. Remove the needles - they're the part of rosemary that gives the flavor. Chop them into fine pieces.

Combine the Ingredients

Add the butter, goat cheese, and rosemary to your bowl with sun-dried tomatoes. Use back of the fork to combine all ingredients.

Place a sheet of parchment paper or wax paper on your cutting board. Transfer the butter cheese mixture into the sheet of paper.

Chill the Tomato and Rosemary Butter

Shape the butter into a one-inch log. You can use your hands to do it. Fold it into the parchment paper, and store it in refrigerator until you're ready to use it.
