Transcript:Salmon Frittata Recipe

Hi! My name is Rich Vellante. I'm the Executive Chef for Legal Sea Foods in Boston MA, for About.com Food. Today I'm going to show you how to do some things with frittata. And we're doing a salmon frittata, and it's really with leftover items.

Salmon Frittata Ingredients

And this is what we have. We have some salmon, which is cooked. And what we do is, we have some fantastic ingredients that go with it.

I have some roasted peppers, which always go well with eggs, and here we have some feta cheese. And make sure when you go out you buy real authentic feta cheese as it really does make a difference. We have a little bit of Parmesan cheese, and a little bit of green onion.
  • 8 large eggs
  • 1 tbsp cream cheese
  • 1 tbsp olive oil
  • 2 tbsp feta cheese
  • 3/4 cup cooked salmon
  • 3 tbsp chopped scallions
  • 3 tbsp chopped red pepper
  • 2 tbsp grated Parmesan
  • salt to taste

Prepare the Eggs

So let's get to work here. I have eight eggs in a bowl, and that is what we start with. And I'm going to add a little bit of salt to that - not too much as many of our ingredients are already salty. Here we have just these eggs which I'm mixing up, and in the meantime while I'm mixing these up, you want to put your oven up to a 350 degree oven.

Mix the Frittata Ingredients

So I have here some of this red pepper, and you can put in as much as you like. A little bit of Parmesan cheese. If you are a cheese lover, you can put in more. And add some feta. Now I'll crumble up this feta cheese. I think that's what really makes it in this dish here.

Add the Salmon

Then lastly we have our salmon. You can break this up as salmon is fairly flaky, and you can break that up into bite-size pieces. And this will be about 6 or 7 ounces of fish.

Fold the Ingredients

So that's essentially it. It's really a meal in itself, and once you're, done you are all set to go. I'll throw in some scallions or green onions and then we are ready to go. Ill just fold it up a little bit, mix it up, and then put it on the stove. I'll add a little bit of oil and come over to the stove.

Cook the Frittata Until It Sets

I added just a little bit of oil, and I'll pour the mixture right in. Now this pan is about an 8-inch pan, you can see it kind of solidifying a little bit. If you have a rubber spatula you can work the sides. Don't panic. It will form on the side and you can sort of roll it around a little bit and fill in any empty spots.

You want to spread some of the items around a little bit. And let that set and one thing you need to be careful of is that the pans that you use are oven friendly, so that the handles don't burn off. So that's what we've done, we've set this egg mixture or the frittata.

Bake the Salmon Frittata

And then well put that in the oven at 350 degrees for about 15 minutes.

Serve the Salmon Frittata

There we go. This is the end product. This is very hot. And what Id like to do really is let it set a little bit and maybe run a knife around the edges. So here we have the frittata. We invert it onto the pan, and there you go.
