Hi, I'm Chef John Mitzewich for About.com Food. I'm going to show you an unusual way to dress a salad with blue cheese. We're doing mixed green with blue cheese "snow."Problems With Crumbling Blue Cheese
Here is how most people portion their blue cheese, they just crumble it on. Now, a couple problems here. Number one, because you want a fork full of blue cheese with every bite, you put on too much.And, because the blue cheese is heavier than the salad, it falls to the bottom, and when you're done with your salad, there's all your blue cheese at the bottom of the bowl.
And, even more horrifying? BCF, or blue cheese fingers. A horrible affliction!
How to Use a Rotary Grater
Here is how we're going to stop that. We're going to use what's called a rotary grater, and we're going to make blue cheese snow.These rotary graters, made of plastic, simple construction. You flip it open and throw in the blade and close it.
They are made for Parmesan and hard cheeses, but are also great for this technique. They are very inexpensive and easy to find at any kitchen store or online.
Cut and Freeze the Blue Cheese
Take the blue cheese and cut it into 2-inch cubes, so they fit in the top of the grater. Throw them in a zippered bag.The key to this "snow" is, we're going to freeze the blue cheese for about two hours before service. It will get nice and firm, and then we're going to load it up.
Grind the Blue Cheese Over the Salad
There is the rotary grater. I also keep that in the freezer, but that's optional. Put in a chunk of blue cheese in the top, lower the handle on top, and prepare to grind.All right, we're going to let it snow. That's why I call this blue cheese snow; you go around the salad and grate the blue cheese and its "snows" blue cheese all over the top of your salad.
Benefits of the Technique
This is a great technique. It's really interesting for parties, total blue cheese distribution, great if you are on a diet since a small amount of blue cheese goes a long way.What's not to like about it?
