Hi I'm Tara Pereira with About.com. Today I'm going to show you some delicious fillings for your savory crepes. These thin french pancakes crepes are quite versatile, and savory crepes are a great choice for lunch or a Sunday brunch.
Ingredients for the Savory Crepes Ideas
To make these these savory fillings, you'll need:
- a stack of pre-made crepes
- 1 bunch of washed and dried spinach
- 10-14 white mushrooms
- 1-2 tablespoons olive oil
- 2 shallots minced
- salt/pepper to taste
- shredded Swiss cheese
For the Ham and Cheddar Crepes:
- 4 oz. of sliced ham
- shredded cheddar cheese
For the Savory Chicken Crepes:
- 1 cup of shredded chicken
- 1 jar of roasted red pepper
- 4 tablespoons basil pesto
- 1 package of crumbled goat cheese
Make Spinach and Swiss Savory Crepes
Crepes are so versatile. You can flavor the batter with fresh herbs or spices and use your favorite ingredients as a filling. First add 1-2 tablespoons of olive oil to a preheated skillet on medium, Saute your shallots and mushrooms until tender. Next add your spinach. Cook the spinach until wilted. Here is a tip. Spinach and mushrooms hold a lot of water so you need to cook out as much moisture as you can. Otherwise you'll end up with a soggy crepe.
Rewarm a crepe on your cooktop. Add Swiss cheese, let it melt and then top with 1/4 cup of your favorite filling -- in this case your spinach and mushroom mixture. Fold over and serve.
