Transcript:How to Make a Homemade Spaetzle Recipe

Hi, I'm Jennifer McGavin for Today I'm going to show you how to make homemade egg noodles from Germany called spaetzle.

Ingredients for Making a Spaetzle Recipe

I'm going to make spaetzle for four people so I need three and a half cups of flour, a teaspoon of salt, four eggs and about a half a cup of water. Some people make it with all eggs and no water. If this is what you want, you will need seven or eight eggs.

I recommend using a mixer for best results. I really don't want to mix these noodles by hand.

Mixing the Ingredients to Make a Spaetzle Recipe

Add the water bit by bit and mix in-between until you achieve a good consistency. When you get there it will just peel off the spoon. Let it rest for ten minutes while you heat up the water, then give it another good stir.

You want the water to be almost boiling but not quite. I'm using a "Spaetzle Hobel", or planer, which makes it easy to get good noodles. Fill the hopper with some of the dough. It's a bit sticky, so be persistent.

Slide the hopper back and forth and the noodle dough will be pinched off and fall into the water. Use all the dough in the hopper, then wait until they float and scoop them out into a bowl. This will take three to five minutes. It helps if you have an inverted cereal bowl in the bottom of a big bowl so the water can drain away and the Spaetzle will stay dry.

Items to Add to a Spaetzle Recipe

You'll want to serve the Spaetzle with some sort of sauce or gravy. They go with lots of German dishes such as Sauerbraten, Lentils and Frankfurters or Kaesespaetzle [macaroni and cheese], but today I'm going to dress them with browned, buttered crumbs.

I need about a half a stick of butter and a quarter cup of bread crumbs, which is about a one to one ratio. Melt the butter, then add the bread crumbs and stir until everything is fragrant and brown. These smell wonderful while they are cooking. Spoon the breadcrumbs over the Spaetzle and toss them like a salad at the table.

As you see, it doesn't take much time at all to make fresh noodles, just like Oma's [grandma's]. You'll wow your family and they might even wash the dishes for you.
