Transcript:How to Make Ham and Asparagus Rolls
Hi, I’m Roblé for About.com. Today I’m going to show you how to make German style asparagus and ham rolls. Here we go.
Ham and Asparagus Roll Ingredients
- 1 bunch asparagus (large)
- 1/2 pound black forest ham (sliced thin, but not too thin)
- 1 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon whole-grain mustard
- Kosher salt
- fresh cracked black pepper
Trim the Asparagus
For our first step we are going to trim our asparagus. Take these rubber bands off. You want to take a few at a time. Line these all up. You want to trim them down. You want to take off his bottom white part. It is pretty tough and not very palatable. So, we are going to line these up and cut them at an angle. Just like this. Continue this process until you have trimmed all of your asparagus.
You make sure that you set yourself up with a nice ice water bath. You will be using this to shock your asparagus when it comes out of the hot water.
Boil the Asparagus
So, here we have a pot of boiling hot water. I’m going to go ahead and salt the water. You want to salt the water until it tastes like the ocean. Next I’m going to take my asparagus and drop it right into the boiling water. We are going to blanch these. Cover them up. They should take about one minute.
Our asparagus is all done. I’m going to drop it right into the ice bath. Let it sit in the ice water until it has chilled all the way through. It should take about four minutes. Move it around every minute or so.
Mix Mustard Topping for Asparagus and Ham
While our asparagus is cooling down I’m going to take the oil, lemon juice and mustard and combine them. Use a fork to whisk them altogether. We are going to drizzle this over top of the asparagus once it comes out on the ice bath.
Here is our asparagus. It has cooled down. You can see that I have laid them on top of some paper towels. Now I will just block them dry with another paper towel. you want to get any excess water off of your asparagus. Now I have my spears on the plates. Here is that mixture of oil, lemon juice and whole-grain mustard. I’m going to give this another mix around and drizzle it right over top of the asparagus.
Roll the Asparagus in the Ham
Now I’m going to get in there with my hands and make sure that everything is evenly distributed. So here I have one slice of ham and two slices of ham. Just hit it with a little bit of fresh cracked black pepper. Now I’m going to take one asparagus and lay it right across. Just like that. To take your hand and hold it right around the asparagus. Nice and easy. There is your ham and asparagus roll number one. Just keep repeating this process until you have rolled all of your asparagus.
