Transcript:How to Make Butter Kuchen

Hi, I'm Laurel Morley for, and today we're using Jennifer McGavin's recipe to make butter kuchen, or butter cake. 

Ingredients for Butter Kuchen

  • 4 + 1/2 cups of flour, divided  
  • 1 package of dry yeast  about 2 1/2 teaspoons) or 1 cube of fresh yeast
  • 1/2 teaspoon of salt
  • 1 cup of lukewarm milk (110 degrees)
  • 1 1/2 cups of sugar
  • 1 cup of butter, divided
  • 1 egg
  • 2 teaspoons of cinnamon

Mix the Butter Kuchen Batter

Pour 4 cups of flour into a mixing bowl, and create a hollow, or a bowl shape in the center.  Sprinkle the yeast, fill it with the lukewarm milk, add just a pinch of sugar and mix it just enough to combine a little bit of the flour with the mixture.  Set it aside for 15 minutes in a warm place to give the yeast a chance to activate .  

Once there has been active growth from the yeast, which you can tell by the raised top and the bubbles, we're going to mix the dough.  

Let's move this to the stand mixer.  You're going to add the egg, 3/4 cup of sugar, 7 tablespoons of softened butter,  and then we'll mix.  We want this to get smooth and form a ball.    Grease the ball with a little extra butter.  place the ball in the bowl.  Turn once to coat.  Lightly cover your bowl,  and set it aside for 15 to 30 minutes to let the dough rise.  

Make the Butter Kuchen Topping

Now is also a good time to prep the topping.  Take 1/2 cup of sugar, 2 teaspoons of cinnamon, and mix them together in a small bowl.  We'll also prep our butter we're going to use by chopping it into small pieces.

Bake the Butter Kuchen

Prep your work surface with  a light sprinkling of flour, and roll out the dough to about 1/2 inch thick.  Transfer your dough to a jellyroll pan, that we've pre-greased and we're going to let it rest in the pan for 15 minutes.  Now would be a good time to preheat the oven to 375 degrees. 

Ok, we've let it rest, and now we can use the back of a spoon or your fingers to dimple all over the top of the dough.   Then we're going to sprinkle our cinnamon and sugar mix over it, evenly.  And follow that with the butter, as evenly as you can.

Put it in the oven to bake for about 25 minutes.  The cake should be done, and the sugar cinnamon will have caramelized a little bit.
